Spartak

            My favorite Spartak. I have tried so many other kinds of Spartak but this one still my favorite for many years already. Long time ago, one sweet lady, who is my husbands costumer, shared this recipe with me and I am very glad she did, because we love it and I really hope you will love it too:). This cake takes some time but believe me it’s worth it. So many ladies asked me about Spartak recipe and I finally did it. I hope you will be satisfied!

Ingredients:

1egg

1cup sugar

6tbsp milk

2tbsp honey

50gr unsalted butter( 1/2 stick)

2tsp baking soda

2tbsp distilled vinegar

2tbsp cocoa powder

3 cups all purpose flour and 1/2 cup for rolling the dough

For the cream:

1 lb unsalted butter, room temperature

4 packs (8oz) cream cheese, room temperature

2 cans sweetened condensed milk ( 14 oz each)

2 tbsp Kahlua

                                                                                              1. In a medium pot mix together 1 egg +1cup sugar with a stand mixer. About 4 min.

2. Add 6tbsp milk+2tbsp melted honey.

                                                                                               3. In a small cup combine baking soda+distilled vinegar and add it to the egg mixture. 

4. Put 1/2 stick soften butter .                                                  

5. Bring a medium/large pot of water to a boil. Place egg mixture over the steam(not immersed to a water) for 10 min, stirring 3 times during 10 minutes.                    

6. Remove from heat and stir in cocoa powder immediately, mix well. Let it chill for 30 min and stir in flour ( 3 cups). I like to roll out the dough while it’s warm. Divide the dough on 6-7 even balls.

7. Preheat the oven to 350 degrees.                                       

8. I use the foil to bake my dough. Sprinkle small amount of flour over the foil, place one ball at a time and roll it out to 13” circle. Place round 13” dish  over the dough and cut out the circle with a knife. Pull the scraps away from the circle and later, bake them all together , you might wanna use them for the sides of your cake.                                                                                           Poke each dough with a fork in few different spots. I had a sweet helper this time – my daughter, as it was her birthday so she was participating a lot that time😍.        

Bake at 350 degrees for 11 minutes. Let your baked cake layers cool and then you can transfer them to a dry surface. You can make cake layers few days in advance (just wrap them with plastic wrap until ready to frost)

Time for the frosting:

     

9. Using the stand mixer with a whisk attachment, beat soften butter and condensed milk on high speed for about 4 minutes, scraping down the sides. Start mix in SOFTEN cream cheese by small pieces at a time + kahlua until smooth. All together about 6 minutes. Make sure your butter and cream cheese are soften, otherwise you might get small chunks of cream cheese or butter in your frosting.

Finally, we came to my favorite part: assembling the cake:

         

10. Spay each cake layer with a small amount of water. Place first cake layer on a cake plate and spread 6 tbsp of frosting evenly. Repeat with all the cake layers. After placing the last layer, press it down with your hands so you don’t get air gaps after all. Finish by frosting the sides.

11. Crush the baked cake scraps and lightly sprinkle over the sides and even over the top if you want. In my case I was decorating it nicely for my daughters birthday.

    This is THE BEST recipe for Spartak I have ever came across. I tried many other recipes and was always disappointed with results. It never came out to taste like “spartak”. Just want to say Thank you for sharing really delicious recipes. I would love to see more cake recipes. Especially drunken cherry cake. Would love to try your version.
