Loaded Mixed Greens and Mushrooms Salad with Honey Mustard dressing

Don’t you love a good salad?! Leafy greens, mushrooms, bacon crumbs and crunchy roasted almonds is the perfect combo, that makes this salad so delicious and flavorful. This salad fills you up so well, that it could totally replace a meal. A while back, one of the ladies brought this salad to a church event and I fell in love with it right from the first bite! Its that good!

This salad is a total time saver! During this busy season, we get invited to many potluck parties, and since it’s always hard to decide on what bring to a church event or a family potluck party, this salad comes to your rescue. Make it for your next event and you wont be disappointed with that decision. Huge thanks to Olya, for sharing this amazing recipe with us.

Ingredients needed:

1 lb Salad greens, mixed

8 oz white mushrooms, sliced and cooked

1/4 cup dry bacon, crumbled

1/2 cup green onions, chopped

1/4 cup roasted almonds (I prefer w/ honey)

1 avocado, sliced

2-4 tbsp Dijon Honey Mustard Dressing

  1. Let’s start off with washing and slicing our mushrooms. Start off with cooking sliced mushrooms in a frying pan without any oil, and no salt (seasoning mushrooms while cooking makes them look very dark) until all the water from the mushrooms will evaporate. Mix them, so they would not stick or burn to the pan. Once water is gone, transfer the cooked mushrooms into a bowl and let them cool off.
  2. To assemble the salad, layer all the ingredients neatly and just let it chill in the refrigerator until ready to serve. Toss the salad with Dijon Mustard dressing or you can lightly pour the dressing over the salad and toss it at the table (that way your guests would be able to see all the delicious ingredients layered nicely on the plate)
