The Very Best Baked Halibut

 

Today, I would like to share with you a delicious way to prepare fish that any meat lover will appreciate!

From very young age, I have always loved white fish, and to be honest, back in the days, we didn’t even know what salmon is. My mom was always trying to cook healthy meals for us, which included fish at least once a week. Usually, it was fresh fish, that one of the neighbors would catch and bring over. Mom  usually prepared the fish by simply frying it, seasoned with salt and pepper, coated in flour and egg wash, and it was my all time favorite.

Nowadays, for my own family, I try to do the same and plan at least one – two seafood days each week. We all love seafood and enjoy it, either grilled fish, shrimp scampi or seafood Alfredo pasta..

I have been making halibut for many years and found this recipe to be one of the best. If you have not tried halibut before, it is a firm, meaty white fish, with mild flavor and texture. This Halibut is very juicy, with garlicky flavor and rich taste of parmesan. I know that this fish is kind of pricey, but ohh it’s so worth every penny. Treat yourself to it at least sometimes and you won’t be disappointed.

Ingredients:

4 thick halibut fillet

1 squeezed fresh lemon

Salt and pepper to taste

For the Topping:

5 tbsp unsalted butter, room temperature

1/4 cup mayonnaise

1/2 cup grated Parmesan Cheese

3 tbsp green onions, chopped

5 medium garlic cloves, minced

 

Preheat the oven to 450 degrees. Place each fillet into a baking dish, coated with parchment paper. Season with salt and pepper on both sides. Squeeze lemon juice over each fillet. Bake for 6 minutes.

Meanwhile, mix all topping ingredients in a medium bowl. As soon as halibut is baked, take it out of the oven and spread the Parmesan mixture over the top of the fish. Turn the oven to broil and bake for another 3 minutes. Watch out not to burn the fish! The top should be lightly browned. Serve hot over buckwheat, rice, mashed potatoes or veggies.
