Summer Corn Salad (on a grill)

Summer Corn Salad is super easy to make and will be a hit at any party! My sister in law, Tanya, made it about a year ago for a dinner and served it with a steak, everyone kept asking for more, until the plate was empty. After that, every time we have barbecue, this Summer Corn Salad is always on the list:) It is very customizable as well. You can add cilantro, cheese, avocado…and it will taste absolutely yummy. I made it simple so my kids can enjoy it. Sometimes, we grill a lot of corn and I just store few extra cobs for the next day lunch or dinner. I am mixing everything right before serving. This easy corn salad is definitely a keeper:)!

Ingredients:

6 sweet corn cobs

1/2 stick of butter (4 tbsp)

1tbsp chopped Italian parsley

1 chopped garlic clove

half of a squeezed fresh lemon

seasoning salt (to taste)

foil (for grilling the corn)

Clean the cobs of corn of the husks. Roll up each cob in the foil. Place on the grill on about medium heat (I do the same heat that I use for meat or fish). Grill for about 20 Minutes turning occasionally. Carefully unwrap each corn cob – these are hot!

When the corn is cool enough to handle, put the stem end on a board, hold the tip with your fingers. Use a sharp knife to cut the kernels off the cob.

  

On a medium heat, in a pan, melt the butter and add corn. Season the corn with good amount of seasoning salt and mix everything well. After the butter is completely melted and the corn is seasoned well, transfer it into a medium bowl. Add Italian parsley, lemon juice and chopped garlic, toss to coat.

Serve warm!
