One Pan Sausage and Veggies (healthy meal prep)

Brunch cannot get any better, if this dish is on the table. It has a very elegand look, rich taste and is absolutely easy to make. Sweet potato, delicious sausages, arugula and cheese…. mmmm, when I only think of this combination, I am getting hungry already.

After I tried to make this dish few weeks ago, it became my very special dish.

Let me tell you something: It is very nice to meet new people. One of the reasons is because each family, state, country has their unique and special dishes. I love to share recipes with people and also love to ask people about their popular meals in the house. Few weeks ago, we were traveling, and met a Ukrainian family from Portland, that were on a mini vacation as well. We had a good fellowship and after little bit, we came to the conclusion that both of our families love to host. The lady started showing me their family favorite meals and as soon as we came across a picture of this dish, I asked her if she could share her recipe. She gave me clear instructions on how to make it and as soon as I came home, this dish was on my menu list. I was hosting a brunch at my house and this dish was a hit. Everyone enjoyed it and asked to share this recipe.

This One Pan Sausage and Veggies dish is perfect for big gatherings and for a nice family breakfast. It looks fabulous on the table and has very extraordinary taste.

Ingredients:

2 – 3 sweet potatoes

10 Breakfast sausages or any your family favorite sausages (we love chicken and apple sausages)

4 eggs

1lb Baby Arugula

1/2 cup shredded Parmesan

extra light olive oil

salt

pepper

Everything but the bagel seasoning

Preheat the oven to 430 degrees. If you want your sweet potatoes to be more crispy turn the oven to 450 degrees.

Wash and cut sweet potatoes. Place on a baking pan. Sprinkle with some salt+pepper+everything but bagel seasoning. Lightly drizzle with extra light olive oil.

Place seasoned sweet potato into the oven for 20 minutes.

Cut sausages by half’s and place around the potatoes. Bake for another 10-15 minutes. Depends on the sausage thickness.

After your sausages are done, beat the eggs and pour them all around the pan to cover sweet potatoes and sausages. It doesn’t have to cover everything, but most of the dish. Now you need to be very careful not to over bake eggs. The eggs have to be medium rare kind of runny. Place the pan into the oven for another 1-2 minutes, but not more then 2.

Take your dish from the oven, sprinkle with baby arugula and little bit of olive oil. Ground some fresh salt and pepper on the top. Finish the dish to perfection with 1/2 cup of shredded Parmesan.

In less than 30 minutes, it’s ready to be served. If you didn’t finish it all at one time, just cover with a food wrap and enjoy it later or the next day, if no one eats it until that time:)
