Zucchini Noodles with Shrimp Scampi

Homemade food can taste just as good, or even better than restaurant food, and this dish is a proof of that!!! So many great flavors in just one meal. Garlicky flavored shrimp soaked in beer, served with cooked zucchini with a rich flavor of Parmesan and freshly squeezed lemon sounds fantastic. What makes me even more excited about this meal, is that it can be done in less than 15 minutes 🤗. I  never thought this dish will be so addicting, but I guess I was wrong. I love it and this is my new favorite:) If you are a pasta lover ::::::::::Ta-Da:::::::::::: this is a great substitution from lots of calories to a happy day.

I recommend to prepare all ingredients before you start cooking, as that part takes no time at all and you will need to work really fast.

Ingredients:

2-3 zucchini (bigger size)

1/2 stick of butter (4tbsp)

1/4 cup shallots , chopped (optional)

1/4 cup Italian parsley, chopped

1tsp + 1tbsp garlic, chopped

1/2 cup Corona beer or white wine

1/2 cup cherry tomatoes, cut in half

salt and pepper to taste

1/4tsp red pepper flakes

1/2 of freshly squeezed lemon

10-12 shrimps, uncooked

2 tbsp Parmesan, shredded

Grind zucchini with a vegetable spiralizer. You can use something as simple as carrot peeler to slice up a bowl of ribbons, but it’s so much easier with a spiralizer.

Have all your veggies chopped and ready.

Heat a large skillet on a medium-high heat. Add butter, shallots, 1tsp of garlic, Italian parsley, red pepper flakes, beer or wine, 1tsp of salt and 1/4 tsp of pepper into the hot skillet. As soon as butter is melted add shrimp and cook on each side for about a minute per side, drizzle with a freshly squeezed lemon (about 1tbsp of lemon juice). Do not overcook the shrimp, as soon as they turned pink, transfer them to a small bowl.

After you removed the shrimp from the skillet, put zucchini noodles into the same sauce, and mix them well while zucchini is cooking (about 5 minutes). Do not cook zucchini for too long, because they might turn into a soggy, watery mess.

If your noodles look too dry, add another 1-2 tbsp of wine or beer.

!!!!! I never thought that alcohol will make such a difference in food but it seriously does. Food taste absolutely different with or without. !!!

Add tomatoes into a skillet, season the noodles and tomatoes with salt and pepper to taste, add 1tbsp of garlic and cook for another minute. Drizzle with freshly squeezed lemon (about 1tbsp).

You can also cook the tomatoes separate from noodles as we did with a shrimp.

  

Time to serve our fancy-shmancy dinner:). Transfer zucchini noodles into a serving plate and add tomatoes and shrimp on the top. Sprinkle with good amount of Parmesan. Serve immediately.

Tip: you can reheat the noodles anytime, they will taste absolutely delicious even on the second day)
