Irene’s Banana Bread

Super easy, flavorful and will quickly become your new favorite! This is honestly the best Banana Bread recipe EVER! Pineapples makes this Bread super moist and adds extra flavor into it. We love nuts and this recipe has good amount of nuts. I made up this recipe many years ago and we gladly enjoy this Bread for breakfast or as a snack or as a sweet treat at the evening when we are having a family tea time:)

It only takes few minutes to mix all the ingredients together and while you are doing some other stuff the Bread is baking. In just 1 hour in 10 minutes it’s all done and ready to be served. My girls really like it warm with drizzled sour cream and jam on the top. When the Banana Bread is cold we are enjoying it with cup of tea sprinkled with powdered sugar.

It is surely a crowd  pleaser. Give it a try my friends!

 

Ingredients:

1 stick of butter (1/2 cup), room temperature

1 cup sugar

4 eggs

2 ripe bananas

4 oz canned crushed pineapple

1/2 cup chopped nuts

2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Powdered sugar (optional)

1. Preheat the oven to 350 degrees

2. Mix butter and sugar. Add eggs one at a time. Mix well.

3. Smash bananas with a fork and add to your batter.

4. Add crushed pineapples together with a liquid/ juice from the can.Add nuts and mix the batter with a spoon.

5. Add dry ingredients and mix everything together.

Pour batter into a loaf pan. Cover pan with parchment paper. Bake 60-65 minutes. It’s okay to let the crust get darker if baked longer, as it won’t hinder the taste. Let it cool a little and take the Bread out from the pan.

    Hi Irina,
    Did you ever try baking this bread as mini muffins? I’m trying to figure out how long it will take in the oven if I’ll make bread bites instead of whole loaf… any suggestions?

    • Hi Olga!
      Yes I did bake them as a muffins. They taste absolutely the same. I baked them around 15-20 minutes. Depends on your range heat. I like to check them with a toothpick, if the toothpick comes out clean- they are ready.

I really want to make your Paska (Easter Bread) but not sure how it will taste as i plan to shape it like a braid and bake in the regular dish. What would you advise?
