Waffle Ice Cream Sandwich

When it comes to summer, the most common  phrase in the house is ” mom, can I have ice cream?”. We love ice cream, when I say we, I mean all of our family members:), especially my daughter Rita and my hubby. What is a summer without ice cream?! I think most of you would agree with me.

Last summer, I got invited to a baby shower, where I had a chance to try this delicious dessert, and let me tell you, it was gone in minutes. I tried one piece, then I took another one and I felt guilty to eat so much sweets, I thought everyone is looking at me and judging me about how much I am into these yummy sandwiches, so I stopped:(. But after that party, I was dreaming about these waffle ice cream sandwiches for a while. Some time past and I had a Bible study at my house. One of the girls, who was at that baby shower, was invited to my house and guess what? She brought me 2 big Waffle Ice Cream Sandwiches 🙂 ohhhhhh I can’t even explain how happy I was about having a chance to eat as much as I want after guests would leave and no one would see it me dig in, but it didn’t happen. My husband came up and asked for a cut, then my kids, then there was only few cuts left for me.

Nadiya, the girl who brought that addictive dessert, was such a sweetheart and she was delivering more Waffle Ice Cream Sandwiches to my house every other month. Finally, I had a chance to invite her to share this amazing recipe with you my friends.

If you are looking for an easy and delicious dessert, this one is a winner. What’s so great about this dessert is that you can make as much waffles as you want, all you need is extra space in your freezer. They can be stored for quite a bit. Can’t tell you how long, because in my freezer it doesn’t stay long:) oh, and they take only 30 min to make.

Ingredients:

You will get 2 Waffle Ice Cream Sandwiches, that can be cut up to 20 mini sandwiches, each waffle.

12 waffles, you can find them at any European stores

1/2 can condensed milk (7oz)

1 stick unsalted butter, room temperature

1 1/2 pack Philadelphia cream cheese (12 oz), room temperature

16 oz cool whip

1 can dulce de leche ( cooked condensed milk)

  

1. Spread dulce de lèche evenly on 6 waffles, cover them with 6 other waffles. You will get 6 dolce de lèche sandwiches.

  

After you are done spreading dulce de lèche over waffles, make one big tower with all the waffles and place something heavy over the top waffle to make the waffles stick well, about 10 minutes.

      

2. Meanwhile, lets make an ice cream frosting.

Beat butter and condensed milk for about 5 minutes. Cut the cream cheese into small cubes and add to the butter mixture, one cube by one. Mix for another minute or two. Turn off mixer add cool whip and continue mixing for about 30 seconds, scraping the edges. You should get very fluffy and light frosting.

3. Remember, we are doing 2 separate Waffle Ice Cream Sandwiches. Spread the frosting on 4 dolce de lèche waffle sandwiches evenly and cover each sandwich with dulce de lèche waffles that was left. TA -DA!!! You made it to the end. Cover each Waffle Ice Cream Sandwich with food wrapping paper and freeze for at least 24 hours. Serve Waffle Ice Cream Sandwiches cold straight from freezer as they will melt away in the sun.

My little helper is trying to help mama cut it faster so he can taste it before everyone else:)
