My Famous Crepe-Jell-o Rolls

Idea of this delicious dessert came from my sister in law Tanya, after her resent visit to Ukraine. She told me about how beautiful and tasty this dessert is. Finally I decided to try making it. After trying this recipe many times, finally i found perfect ingredient combination for this very light dessert that everyone loves. It’s perfect combination of chocolate, light cream with a touch of sour cherry.

Ingredients:

10-15 chocolate crepes (depends on a size of your pan) (you can find the recipe for the crepes in my dessert categories )

Cream:

400 gram sour cream

1 cup sugar

1 Tbsp  vanilla extract

8 oz cool whip, refrigerated

3 packets of Knox unflavored gelatin

1 cup water (to dissolve your gelatin)

1 can sour cherries (I used Trader Joe’s cherries, but you can find them at any european store near you)

 

 

  1. In a small cup, combine 3 packets unflavored gelatin with 1 cup of cold water. Leave it alone for about 3- 5 minutes.

2. Put it in the microwave for 20 second and then whisk it with your fork and continue to heat the gelatin in your microwave until it just begins to steam. DO NOT BOIL. (approximately 1 min in microwave all together) You can use a small sauce pan and heat it over medium heat instead of using microwave.

3.Meanwhile, in a bowl, use an electric mixer on medium speed, whisk together sour cream + sugar, make sure your sugar is dissolved.

4.Add cool whip + vanilla extract and whisk until well blended.

5. With the mixer on, slowly add the warm gelatin mixture.

6. Immediately pour 4 tbsp of the cream on each of  your crepe  ( put all your crepes on your working surface before mixing your cream) and smooth the top. Put a layer of sour cherries on the top of your cream and let the cream chill for few minutes before you will roll your roll.

7. After you roll the rolls, cover them well (so they wouldn’t get dry on the ends) and chill in the fridge for 4 hours or overnight.

Lately, I have made these in different colors and with different fillings. People that have seen these on my story, are asking for recipe. Because of that, I decided to update my original post.

Crepes- Same batter as above, except for cocoa powder. Instead, I add 2-3 drops of preferred food coloring. You can customize these to your liking.

As for the filling, I use the same base/cream as above, but use different fruits for each color. I’ve tried few different options, and noticed that canned fruits work best. Our family favorite is orange crepes with canned peach.

Options of fruits I’ve tried and loved-

Canned: cherries, peaches, mandarins.

Fresh: blueberries, raspberries.

The only downside of using fresh fruit is the crepes cannot be stored as long as with canned fruit.

    Irina, I’m making them right now for moms birthday tomorrow evening… I want to use my frozen cherries. Will they be okay for tomorrow? How long can they be stored with fresh/frozen fruits?

    • Hi Vera! To tell you the truth, I never tried frozen fruits for this dessert. I am worried that the cream might get kinda wet from the frozen cherries. When I do fresh fruits, then I serve them only the next day but with canned fruits they can be stored for up to few days:)

    Hi , i love them , they are beautiful and so good ! I was wondering if I can do 4 days ahead ? And where do I store them , refrigerator or freezer ?

    • Hey) I’m so glad to hear that. You can store them in the refrigerator cover with paper towel on the top and wrapped with food wrap. That way they will be fresh and not gonna get dry on the top😉. I would recommend no earlier then Saturday if you are making them for Christmas.

    Irina, how long do you have the crepes rest at room temp after putting the cream and fruit onto them..before rolling them up? I noticed the cream rose in my bowl but not really on the crepes themselves. Will they thicken in the fridge? Thanks!

    • Hey Alena. Usually, as soon as I’m done with cooking all of my crepes, I place each of the crepe on my island (separated) and while they are cooling I’m making the cream. The cream supposed to thicken right away. I think it’s all about how you prepare your gelatin. Make sure to watch out when you are melting the gelatin with water in the microwave. Sometimes when I hold it for too long in the microwave the cream doesn’t want to thicken right away. This is why , as soon as I see that gelatin is dissolved I am taking it out of the microwave and mixing it with the cream. (Gelatin still looks kinda blurry)

    • Здраствуйте Леночка. Нет, не рекомендую подогревать так как сметана может просто пойти кусочками и крем испортится. Ноо, можно добавить не много очень горячей воды. Но я рекомендую лучше делать половину крема если уж у вас так бистро застивает крем. Лучше делайте в 2 подхода по 5 блинов: половину крема сбить с желатином и розмазать на 5 блинов а потом опять повторить с остальными блинами и кремом. Надеюсь мой ответ вам поможет❤️
