Beet-Meat Salad

I am always amazed with beets and absolutely love their extra bright color. I think we all know how healthy and delicious they are:) and because of that, I try to add beets in my meal plan at least once a week. Last Friday I decided to try something new with beets and created this salad. I remember eating a very similar salad that our neighbor used to make in Ukraine and everybody liked it, so I decided to recreate it myself. Guess what? Each time my husband was getting a portion of it, he would tell me how yummy this salad is:). So I decided to share this recipe with you. I think this salad is a keeper in my menu list from now on😉.

***Main part about this salad is to find good sweet beets.

Ingredients:

Basically, you want to have even amount of each ingredient, so if you feel like you need to add more of some ingredient – go ahead and do that.

3 medium beets, cooked

5 medium carrots, cooked

3 medium potatoes, cooked

2 cups of chopped pickles

1 cup canned sweet peas

2 cups of chopped Canadian bacon (smoked meat)

green onions, to taste

mayonnaise

salt & pepper

Cook veggies and let them cool. I like to put potatoes in the fridge for about 15 minutes, they are cutting nicely when they are cold. Cut all veggies into strips.

Cut your pickles and place them on a paper towel to drain all of the juice from the pickles.

Cut the meat into strips as well. Add peas.

Gently mix everything together in a big bowl. Close the salad with a cap. Before serving, add chopped green onions, salt, pepper and mayonnaise.
