Marinated tomatoes

These marinated tomatoes came into my recipe book last Christmas. My amazing aunt from Ukraine always gives me delicious recipes that my family are getting in love with. Roma tomatoes work really well for this marinated tomatoes recipe. What I love about this resipe is that you can make them ahead of time. They keep really good in the refrigerator.

  Ingredients for Marinated Tomatoes:

25 Roma tomatoes (6 lb)

11/2 cups dill

11/2 cups italian parsley

20-25 garlic cloves, peeled and cut in halfs

11/2 liter water

1 cup sugar

1 cup vinegar

3 Tbsp salt

1. Make a small cut on each tomato in 4 and put inside each tomato a small leaf of italian parsley and+half of a garlic clove

  

2.Sprinkle  the bottom of your deep bowl with some italian parsley+dill and place your stuffed tomatoes on the top.

3.Sprinkle your tomatoes with italian parsley+dill+left over garlic cloves on the top as well.  

4.Now its time to prepare a marinade. Pour 11/2 liter of water into your large pot and add 1 cup of sugar+3Tbsp of salt+1 cup of vinegar. Bring Marinate to a boil and keep boiling for about 30 sec. Pour boiling hot marinate over tomatoes.

    

         5. It is not going to cover the tomatoes fully.

6.Close your tomatoes well and place them in the refrigerator for at least 4-5 days. On the second day, get the tomatoes out from the fridge and jiggle the bowl so that marinade could get tomatoes in all directions. The more days they are soaked, the richer flavor they get.

P.S. If you want to serve them earlier then 5 days, I would recommend to cut them by half’s and sprinkle each layer with chopped garlic+Italian parsley +dill. Same marinate. That way you can serve them on the 3rd day.

As you see on the pictures, there is few versions how to serve the tomatoes. Pick any one you like the most.

    Irina – these look delicious. I’m a little confused how much salt to use. Ingredients state 3 Tbs. directions state 2 Tbs. which is correct?
