Birthday Chicken Salad

                      Birthday Chicken Salad is a very Ukrainian type of salad. It has a great combination of meat and veggies. Meat and pineapple are 2 main ingredients that makes this salad fabulous. I tried it at one of the restaurants in Ukraine and loved it. Their waitresses are very sweet, so when I called ours and asked her to share the recipe with me. Guess what?! She nicely did.

Ingredients:

2cups chopped roasted chicken

1/4 cup sweet corn (best frozen)

1cup chopped bell pepper

3 cooked eggs

1/2 cup chopped cucumber

1/4 cup raisins (optional)

1cup chopped pineapple (fresh)

Salt, pepper

mayonnaise;dressing

I used Costco roasted Chicken. Meat from the tights would be the best for this salad, so I divided meat in 2 bowls:red meat for the salad and breast for my morning panini sandwich:)

Also, I prefer fresh frozen corn ( I don’t like to work with canned corn, because it really makes difference in the taste). I lightly fry my corn on a pan.

So, the main part in the salad is to cut it correctly. For this salad, you want to cut everything into thin strips.

Add all ingredients into a medium bowl. Raisins in this salad makes a very good taste also. But if you don’t like raisins (like my husband) then do it with out :).

You can store the salad in the refrigerator overnight without mayo. Also, if you know that you want to make this salad ahead of time, then don’t put the pineapples yet, do it right before serving( not to get the salad watery).

Season the salad with salt and pepper to taste and mix with mayonnaise.
