Chicken Thighs in Wine Sauce

It is all about time these days. Time flies so fast and very often many of us don’t have time for a long dinner preps. That’s why I like easy meals. I love to cook something super easy and delicious. This dish is very simple and tastes really good. The chicken is soft and tender,  wine sauce makes it special and interesting. I love how the sauce is very light. Few days ago, when I was working on this new recipe, I cooked buckwheat as a side dish and it was very very yummy. The sauce got thru the buckwheat and made my meal very juicy and flavorful. Today I made it with rice and my girls got super excited because rice is their favorite side dish. It will work great with mashed potato or pasta as well. This meal takes less then an hour to be ready. While the meat is in the oven, I cook my side dish and making quick fresh salad. Just in one hour my family is ready to have a healthy homemade dinner. What can be better.

Ingredients:

1lb chicken thights

1 tbsp. butter

1 cup dry white wine

1 tbsp chopped garlic

1/2 cup heavy whip cream

2 tbsp. chopped Italian parsley

1 big tomato

1 tbsp. of freshly squeezed lemon juice

1/2 cup shredded mozzarella

Mrs. Dash, Montreal Chicken, salt & pepper

 

 

 

 

 

1.Preheat the oven to 360 degree. Wash and dry meat with a paper towel. Remove big pieces of fat from the meat and place all the meat on a chopping board, cover it with a food wrap and lightly beat on the both sides with a meat tenderizer. Season each piece of meat with some salt and pepper. Add a little flavor to the meat with Chicken seasoning and Mrs. Dash. Massage the meat to season it evenly. Cut the chicken on a medium pieces. You can easily make bigger pieces and cut each piece by half only. I am doing more then one cut because for me it is easier to serve it for the kids that way.

2. On a high heat in a large skillet, heat 1 tbsp. of butter. Place all the meat on a hot skillet and cook on each side for about a minute or so. You wanna get golden outside and the inside of the meat should still be raw. Place precooked meat in a medium baking dish. In the same skillet where the meat was cooking start making the wine sauce. Don’t wash the skillet, just add a cup of wine into it and reduce the heat to low. Let the wine evaporate a bit for about 2 minutes and add chopped garlic. After minute or so pour heavy cream and tomato pure. Don’t boil and stir occasionally. Simmer for a minute and add chopped parsley. The cream will become little thicker which is great. Salt and pepper to taste. Sprinkle about 1/4 cup of shredded mozzarella over the meat and pour the wine sauce over it. Cover with foil and bake in the oven for 30 min. Sprinkle more cheese before serving. Serve with your favorite side dish.

Garnish with Italian parsley leaves.
