Farm cheese Fritters (syrniki)

Syrniki are one of the best breakfast meal in my family. I loved syrniki since I was a child, now I gladly make this yummy cheese fritters for my kids because they enjoy them every time I made them. Also, this breakfast is served in many European families for many many years. Their name comes from the huge amount of cheese used in the recipe. They doesn’t take much time to make and the taste of it is  delicious.

Ingredients:

1 lb farmers cheese

2 extra large eggs

2 tbsp oil, plus more for frying

5 tbsp sugar

1 cup flour, plus more for dusting

1 tsp baking powder

pinch of salt

1 tsp vanilla extract

sour cream, jam, honey or fresh fruits for garnish

1. Break up the cheese into small pieces. Mix together cheese+eggs+oil+sugar+salt+vanilla. Add flour+baking powder.

Mix thoroughly until the ingredients are well mixed and the batter holds together.

  

2. Form the batter into a balls and coat each ball in flour.

   

3. Heat a pan with about 2 tbsp of oil. Fry syrniki on a medium heat ( from 1-10 I do the heat on 5)until lightly brown on both sides. It only take about 4-5 minutes on each side to cook the syrniki. Wipe your pan after each time and repeat until all the batter is gone:)

Serve hot with sour cream and any kind of topping you and your family loves.  I love them even cold by the way:)
