Carrot Salad with Raisins

This is a yummy carrot salad that my whole family can’t get enough of! It’s really easy to prepare and it goes great with just about everything. The combination of raisins and garlic is unbelievably great. I think this salad is best served right after its mixed with dressing. You can add apples, nuts or pineapples into it as well, it will taste delicious. I made it simple this time but you can play with it and add ingredients that your family likes.

Ingredients:

3 cups of shredded carrots

1/2 cup raisins

Dressing:

1/2 cup mayonnaise

3 minced garlic cloves

1 Tbsp fresh lemon juice

salt

1. In a small bowl add mayonnaise + minced garlic + lemon juice + pinch of salt and whisk until well combined.

2. In a medium bowl add shredded carrots + raisins, pour dressing over carrots and toss until well combined. Usually I prepare shredded carrots and dressing mixture ahead of time ( in the morning ) and keep it in the refrigerator. Then I mix it  right before serving .
