Mushroom Bruschetta

             This classy little mushroom bruschetta with mozzarella would make the perfect appetizer for your next dinner party or brunch.

Ingredients:

1 good baguette

16 oz white mushrooms

1/2 cup shredded mozzarella

2-3 cloves of minced garlic

mayonnaise (about 1/2 cup)

salt, pepper

parsley

1. Peel and cut mushrooms into thin strips.

2. Season mushrooms with salt and pepper and fry them until water from the mushrooms is evaporated.

3. Place fried mushrooms into medium bowl and let it chill.  Mix with shredded mozzarella + minced garlic + mayonnaise.

4. Cut baguette  into 1/2” thick slices. Spread a good amount of mushroom and mozzarella mixture over each  baguette slice. Place the bruschetta on a baking pan covered with foil.Preheat the oven to 350 degrees and place your bruschetta into the oven to melt the cheese (8-10 minutes).         Garnish each bruschetta with parsley. Serve warm but you will definitely love them even when they will be chilled.
