Honey Cake With Walnuts (Medovik)

Long time ago, my sister taught me how to make this cake. After so many years, its still my favorite. This delicious cake is very easy to make. I would call this cake a Honey sponge cake as well. The texture is very fluffy and spongy. Honey and Walnuts are special ingredients for this cake. The cream is very simple and makes the cake very moist. Go ahead and give it a try.

Ingredients:

4 large eggs

1 cup sugar

1 Tbsp baking soda

3 cups all-purpose flour

1 cup of hot melted honey

3 Tbsp vinegar

950 gr sour cream

2 cups sugar

1 Tbsp vanilla extract

1 cup walnuts

2 packs of Smeta (you can find this at any Europian store)

Optional for decor:

1 cup heavy whip cream

2 Tbsp powder sugar

1.Preheat oven to 350 degrees.

2. Beat eggs and sugar for about 4 minutes. Add flour+baking soda+hot melted honey into the mixture and beat again to combine well.

3. Pour vinegar and mix it with a spatula. Be very gentle with the dough, so you do not over-mix it. We do not want to lose the fluffiness.

4. Using a spatula, divide the dough into 3 equal parts.

4. Place batter in a 12 inch cake pan covered with foil or parchment paper. Bake each cake at 350 degrees for 20 minutes or until the toothpick comes out clean (that is how I usually check my cake if its ready, because each oven is different)

5. Soak well top and sides of the each cake with plain water

6. Time for the cream. Beat sour cream+sugar+vanilla. After the creme is smooth, add 2 packs of Smeta.

Smeta thickens the sour cream and makes it not runny.

7. Spread a good amount of  cream between each layer of the cake. Sprinkle each layer with 1/2 cup walnuts.

Tip: I am putting a very thing layer of cream on bottom side of second and third cake, because i wanna make sure that the cake will be moist as those layers are coated with walnuts a lot.

8. Assemble the cake. Spread the rest of the cream on top and sides.

9. There is a hundreds of choices how to decorate this cake. The easy one is cover it with shredded chocolate. This time, I did it with Macaroons. To make frosting for the flowers: beat 1 cup cold heavy whip+2 Tbsp conf. sugar in the cold bowl for 2 minutes or until whipped.  Pipe frosting onto top of the cake. Cover each flower with macaroon or piece of Walnut.
