Chicken Fritters ( kids favorite)

My family never gets bored from this juicy and tasty Chicken Fritters. My kids getting super excited each time I make them. I love how flavorful they are and so easy to make. Usually, I marinate the meat overnight, that way My dinner takes only 30 min to be ready. While my side dish is cooking ( usually it’s mashed potatoes) I fry the Chicken Fritters and chopping the salad. And almost in no time the dinner is ready to be served.

These guys are also great for when you are hosting. My guests always love them. One time I had an emergency and had to stay at the hospital for few days, after I came back home, I realized that I have my Chicken Fritters marinated in the refrigerator. I cooked them and ohhhh my, how tasty they were.

 

Ingredients:

2lb chicken tenders or chicken tights (optional)

6 eggs

6 Tbsp mayonnaise

2 tbsp cornstarch

3 garlic cloves , minced

1/2 tsp seasoning salt,

black pepper, to taste

1/4 cup chopped baby dill

oil for frying

 

 

 

Wash the meat and let it dry out on a paper towel.

Cut the meat on a tiny pieces (the thinner you can get, the juicier Fritters will be).

In a medium bowl, combine meat with all the ingredients and let it marinate for few hours ( at least 4 hours).

Heat 2 tbsp of oil in a nonstick skillet on a medium high heat. Scoop 1 Tbsp of meat mixture and shape into circles or oval shapes.

Cook for 3 minutes on each side until golden brown.

Enjoy them warm or cold, either way, they will taste fantastic!
