Chicken Noodle Soup(easy version)

This Chicken Noodle Soup recipe is a crowd pleaser every time we go camping or having a cabin get away. Kids & adults love it. No leftovers recorded yet. This soup is a  must have in our get away menu. Also, favorite lunch at home, after holidays. After so many heavy meals our stomach is craving something light and soup is the savior. Chicken Noodle Soup  is easy to make but it does require some time to simmer. It makes enough to stash half in the freezer for rainy or cold days.

Egg Noodles in Chicken Noodle Soup is the best way to go, because my kids love it 🙂 but if you like any other type of pasta, use it instead.

Ingredients:

1/2 organic chicken, or 6 chicken tights

1 big onion or 2 small, cut in half

3 celery sticks

2-3 chopped carrots

1 bay leave

1 Lb egg noddles

1 cup chopped dill

1 Tbsp no msg vegeta (you can find at every europian store)

salt & pepper to taste

7 quarts water

 

1.Separate chicken into pieces. Usually,I cook my soup with half of the chicken, but as you see on the picture, today I cooked the whole chicken.That is because I need some chicken for my salad.

?! Also, I have chicken legs. Its because when we go to a cabin or camping, I usually get chicken legs, its less work and much faster to prepare.

2.Place washed chicken or chicken legs in a 7 quarter soup pot, cover with water and bring it to a boil. Boil for about 30 seconds and rinse. Rinse chicken under cold water, also, wash your soup pot.

3. Place clean chicken in a soup pot and add onions+celery sticks+carrots+bay leaves+1Tbsp vegeta+salt. Bring it to a boil and watch out here with the heat, low it as soon as it started boiling. MAKE SURE THAT SOUP IS NOT ON HIGH HEAT. To make soup have a clear look, simmer on a low heat partially covered for about 1 hour 15 minutes. That way soup will be clear and chicken will be tender.

4. At home, I always strain my soup into a large heat-proof bowl.

5.When meat and carrots are chilled, cut them and place back into broth. ( at get away I cut the carrots right away before cooking, and after soup is cooked, I remove celery and onions with a fork)

6. Cook egg noodles or pasta as directed on a package. Rinse with cold water, not to make noodles stick together.

7. In a soup bowl place 3-4 Tbsp cooked egg noodles+pour chicken broth making sure each bowl will get some carrots and meat. Sprinkle with fresh dill and fresh black pepper.
