Cheesecake with Chocolate Ganache
Absolutely perfect, creamy, smooth, thick and it slices beautifully. This Cheesecake is very easy to make and is very light and delicious. Chocolate ganache makes it very chocolaty and that’s what I love the most about it. My kids get really excited each time I make this Cheesecake. It doesn’t take much time to make at all.
To make it more tall, I make 2 layers of cheesecake with a very small amount of Ganache in the middle (just to hold 2 layers of cheesecake together) I pour good amount of Ganache over the top. But it’s not necessary to make 2 layers. If you will use small baking pan your cheesecake will be tall enough and will look great with only 1 layer. I use 30×22 size cake pan. This size is perfect for one layer. I get around 70 pieces from 1 30×22 size baked Cheesecake.
Ingredients:
For the cheesecake:
5 packs cream cheese (8oz each), room temperature
1cup sugar
10 large eggs
2 tbsp vanilla extract
For Chocolate Ganache:
2 tbsp cocoa powder
4 tbsp sugar
4 tbsp butter
2 tbsp milk
Preheat the oven to 350 degrees.
Mix cream cheese and sugar until smooth, about 1 minute, scraping the sides with spatula. Add eggs one at a time. Add vanilla and mix for another 2-3 minutes.
Pour cheese mixture over baking pan covered with parchment paper. I use 30×22 size baking dish.
Bake for 1 hour. Turn off the oven and let the cheesecake stay in the oven for another 30-60 minutes.
Take cheesecake out from the oven and let it cool.
Very gently take the cheesecake out from the baking pan. With a very sharp knife cut off uneven edges on the top to make cheesecake even.
Gently remove the parchment paper and place cheesecake on the cutting board.
Time to make Chocolate Ganache.
Mix all the ingredients together . On a medium heat constantly mix the mixture with a whisker to get smooth and not burned Ganache.
Pour hot Ganache over cheesecake and refrigerate Overnight.
Cut cold cheesecake with thin sharp knife, wiping the knife with wet paper towel after each cut to get very clean and neat look.
