Mushroom salad
This Mushroom Salad is very light and has a very fresh taste, with rich flavor of garlic and nuts. It is a great addition to any celebration. First time I tried this salad was 11 years ago, on our engagement party. Ingredients were little bit different, but almost the same. My sister made it and all the guests loved it, especially my husband. He loves all meals that includes mushrooms. Since then, I am spoiling my family with this Mushroom Salad!
This recipe is very easy and don’t take much time at all. You can easily make it ahead of time and only thing would be left is dressing. I’m mixing salad with the dressing right before serving. Mushroom Salad looks beautiful on the table and tastes delicious.
Ingredients:
2lb white mushrooms
1 tbsp distilled vinegar
1/4 cup chopped walnuts (thin pieces)
1/4 cup chopped baby dill
3 garlic cloves, minced
sour cream + Mayonnaise 1=1 (same amount of each )
Salt
Pepper
Wash mushrooms and place them in the big pot. Cover with water. Add 1 tbsp salt + 1 tbsp vinegar. Cook for 10 minutes or less (If mushrooms are small then 7-8 minute would be enough).
Drain mushrooms and let them cool on a paper towel. Cut each Mushroom in half . If the mushrooms are bigger size, cut to four pieces. Transfer to a medium bowl, add garlic + baby dill+ walnuts.
Mix even amount of sour cream and mayonnaise in the separate bowl. For this amount of mushrooms, you will need around 2tbsp sour cream and 2tbsp mayonnaise.
Season with salt and pepper and mix with sour cream+mayonnaise dressing. If you are making this salad ahead of time, do not add salt+pepper+Dressing until serving.
